Posted: 18th December 2024

The iconic Sheraton Grand Hotel & Spa in Edinburgh has unveiled two high-profile appointments set to elevate its reputation as one of Scotland’s top luxury destinations. Fiona Young has been named Spa Director, while Stuart Thomson takes the helm as Executive Chef.

Fiona Young steps into the role of Spa Director, overseeing One Spa, the hotel’s renowned four-story wellness haven. Home to Scotland’s only indoor-outdoor rooftop thermal pool, One Spa is widely regarded as a leader in the UK’s spa industry.

Fiona’s 26-year career spans international expertise, including roles with Carnival Cruises, Cranwell Resort in Massachusetts, and the esteemed Kripalu Center for Yoga and Health, the largest yoga retreat in the U.S. Returning to Scotland in 2013, Fiona held leadership roles at Crieff Hydro and Apex Hotels before joining Sheraton Grand Hotel & Spa. Under her guidance, One Spa recently claimed the coveted title of “Best Spa in Scotland” at the Good Spa Guide™ Awards 2024 in association with ESPA.

Stuart Thomson takes charge as Executive Chef, responsible for the hotel’s extensive culinary offerings. From the celebrated One Square Bar and Brasserie, known for its modern Scottish cuisine, to in-room dining, private events, and the exclusive Club Lounge, Stuart’s appointment signals an exciting new chapter for the hotel’s gastronomic landscape.

With a career that includes stints at The Caledonian in Edinburgh, Kimpton Blythswood Square, and Voco Grand Central in Glasgow, Stuart brings an innovative touch to Scottish cuisine, promising to further enhance the city’s dynamic food scene.

Martijn Zengerink, General Manager of the Sheraton Grand Hotel & Spa, said: “The arrival of Fiona and Stuart marks a transformative moment for the hotel. Their expertise and passion will undoubtedly enrich our offering, solidifying our position as a leader in Scotland’s luxury hospitality sector. I am thrilled to welcome them to the Sheraton family and look forward to an exciting year ahead.”

Located in the heart of Edinburgh, the Sheraton Grand Hotel and Spa combines luxury accommodation, innovative dining, and world-class spa facilities.
